Our motto “Wine from the Vineyard” is one way of explaining how wine is a product related inseparably to the “terroir” and to the vine from which it comes from. The quality of the grapes is due to the careful choice of the soils rightly exposed to the sun, of the best vines and vineyards. The grapes-clearing, made by hand during the summer, reduces the yield per hectare and is a b synonym of the quality that can be found in every bottle. Montaldo Bormida, a hill situated between Ovada and Acqui Terme, is the place where two excellent varieties of red vines are traditionally grown: DOLCETTO and BARBERA. As a matter of fact these are the grapes that CA’ DEL BRIC has chosen for the wine-making and from which we produce our four DOC wines: • Monferrato Dolcetto (Mayno della Spinetta) • Dolcetto D’Ovada (Conte di Gelves) • Piemonte Barbera (Mansur) • Barbera del Monferrato (Santa Lussia) Grapes, coming from each single vineyard are separately pressed. The obtained wine matures till late Spring before wine-bottling begins. During this phase experience and knowledge of our wine-experts help to develop two different wines for each variety. Both for Dolcetto and Barbera we get top-wines (Dolcetto D’Ovada and Barbera del Monferrato), that thanks to the aging in big oak-barrels are more full-bodied; as well as a cooler and more fragrant wine (Monferrato Dolcetto and Piemonte Barbera), younger and lighter in taste. Under fullest consideration of raw materials and quality we have decided to use air-pump for the pressing in order to get a high-quality “grappa” from the dregs. To produce the grappa CA’ del BRIC has chosen a traditional method (steam-distillation), so that the innate aroma of the liquor is kept intact. Within 2003 we are going to extend the wines offered adding the young wine Dolcetto (such as described in our wine-list) and Dolcetto Bricco del Trionzo in 2004, as well as other typical wine-varieties of our area.
